Happy Holidays and back to the grind with clean eating!

At first I felt guilty for what I had been eating the past couple of days… Then I thought, Christmas only comes once a year and all these words above describe it! Jolly, celebrate, peace, family, festive etc… So I enjoyed myself, and all the treats I ate because I was with family and I was enjoying myself.
WIAW- Back to the grind:
I started my morning with leftover Christmas breakfast:
Sausage, egg, and cheese bake. I also had a banana because I was still hungry!
Then I headed to the gym: A good ole Cardio and Chest workout for the day. I was going to go to crossfit, but the weather was kind of nasty, and the gym is only 2 minutes away, so I did my own thing. Ill hit up crossfit tomorrow hopefully!
After the gym I had a ton of cashews to hold me over until lunch.
For lunch I picked a bunch of randomness. I was craving salami rolls with laughing cow cinnamon cream cheese so I had a few of those, with the last of the breakfast bake (can’t waste food, plus it tasted good!) I also added in a few veggies with classic ranch yogurt dressing.
I also whipped up a batch of paleo pumpkin walnut muffins. I couldn’t wait to enjoy one with some peanut butter! My batch made 7 muffin
Ingredients:
- 1 cup almond flour
- 1 cup pumpkin
- 2 eggs
- 1/4 cup almond butter
- 1 tbsp honey
- 3 packets stevia
- 3/4 cup chopped walnuts
- 1 tbsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/2 tsp salt
I made some of my own substitutions and only used 1 tbsp of honey with 3 packets of stevia and I used one tbsp of cinnamon instead of 1 tsp! I love cinnamon.
Approximate Nutritional info for 1 muffin:
- 274 calories
- 12.4g carbs
- 5g sugar
- 4g fiber
- 10.4 g protein
So my afternoon snack was a pumpkin muffin with 1 tbsp of peanut butter.
This snack has approx. 369 calories, 15 g carbs, 6.5 g sugar, 5.2 g fiber, and 13.9 grams of protein.
Today was our first REAL snowfall and the first time Jackson has been out in it and he loved it!
For dinner we had chicken Cobb salads with yogurt ranch dressing. YUM!

I’m going to try your workout tomorrow… Since I’m traveling I am having to miss CrossFit for 2 weeks so I’m trying to maintain my strength with my own workouts over the holidays!

I so miss having a dog to play in the snow with. They are always so crazy after the first snow fall hehe. I do work my chest when I do weightlifting. My least favourite exercise is doing cardio but afterwards, I’m happy I did it!

My mom makes a breakfast casserole every year on Christmas that looks similar to yours. I could eat that for every meal! Thank goodness it only gets made once a year! haha
