WIAW- Eats Lately: Cheesy Brussel’s

Good Morning!

I haven’t participated in Jen’s WIAW for a while so I thought I would jump on the wagon this morning!  I thought I would share what I’ve been eating lately since I haven’t posted many food pictures in a while!  As always, make sure you head over to her page and check out some her eats too!

Peas and Crayons

So here goes!

So we’ve had a record low here in Cincinnati, and I captured this temperature yesterday!  It hasn’t been in the negatives since I have been alive!

So there’s been lots of hot tea, and hot chocolate!!

And of course Panera Vanilla Latte’s.  I’m just a little obsessed!

The other night for dessert Alec’s face lit up when my mom made cinnamon rolls and hot chocolate for dessert!  HEAVEN.  I also had one cinnamon roll :)

I’ve also been drinking lots of orange juice!  I love the Trop 50.  It’s sweetened with stevia and has less sugar and calories. It is delicious.

My friend from work gave me some Advocare samples and this was one of the holiday bars.  I don’t even like ginger or gingerbread that much, but this protein bar was delicious!  I just hated how small it was!  I wanted more!

And of course there has to be some failures in life, and these whole wheat blueberry muffins were definitely one of those!  I just don’t know what went wrong, but they were too moist and I just couldn’t eat them.  What a waste of some good blueberries!

 WIN:  Burgers!

I usually buy Laura’s Lean ground beef but this week I wanted a really JUICY burger, so I decided to buy 100% Angus Beef  85/15.  I ate it on a whole wheat bun.  I try to buy bread and buns that don’t have high fructose corn syrup in them.  Nasty stuff.

Do you read labels when you are at the grocery store!?

Breakfasts have consisted of lots of eggs, toast, or egg sandwiches!

Last night I made an amazing dinner of pork chops, sweet potato with brown sugar and cinnamon, and cheesy Brussels.

I had to share the recipe with you!

 Cheesy Brussels:

  •  1.5 cups Brussels Sprouts
  • salt and pepper
  • garlic powder
  • 1 Laughing Cow- light creamy Swiss cheese wedge
  • 1/2 tbsp Parmesan cheese
  • 1/2 tbsp Grapeseed oil or Olive oil

First, cut off the hard ends of the  Brussels sprouts and then cut them in half.  Toss sprouts in oil, and seasoning.  Cook on medium heat on the stove top for about 5-7 minutes or until they start to brown.  Mix in the cheese wedge until melted.  Top with Parmesan cheese. Enjoy!

Makes 2 servings

Questions of the Day:

What’s the best thing you have eaten lately?

Have you tried Advocare?  I like the spark and of course the advobar!

What a bummer about the muffins – they looks so good though :( What a unique protein bar flavor. I don’t think I’ve ever seen a Gingerbread flavor one – even during the holidays. Sounds delicious!

your welcome! I used to HATE anything that resembled them when I was a kid! But if you make them right they are so tasty! I still cant get my step son to eat them though :(
