How was everyone’s weekend? I will show you some scenes from my weekend tomorrow but first I wanted to share what kind of food prep I did last weekend. I’ve been getting better with prepping my lunches for the work week. I even prepped some things for dinner’s too, holy cow!
My week goes much smoother and it a lot less hectic if I have some things ready to grab from the fridge!
Here’s how it went:
- Chopped Veggies for Salads, snacks, and for easy dinner sides:
- Broccoli, Cucumbers, Zucchini and Squash, Carrots, Red Pepper
- Baked Chicken
- Sweet Potato Fries
- Hard Boiled Eggs
- Peanut Butter Protein Balls

Sunday: Taco Salads
Monday: Roast with Sweet Potato and Carrots
Tuesday: Pork Chops with Roasted Asparagus
Wednesday: Pizza for the Boys
Thursday: Chicken BLT’s with Roasted Brussels Sprouts
Friday: Mom’s B day Dinner- Mexican
